Epic Burritos

Ingredients

  • 1 package of un-cooked tortillas
  • 1 package of cilantro-lime rice or Mexican rice, prepared - or make your own from scratch
  • 1 can of green chile & lime refried beans, or regular if you can't find that flavor - or make your own from scratch
  • Sour cream
  • Shredded cheese
  • French-fried onions
  • Tater tots, cooked
  • Creamy Chipotle Sauce (Taco Bell brand)
  • Onion, sliced
  • Bell pepper, sliced
  • 1 T. Vegetable oil
  • Guacamole or sliced avocado
  • Tomato, cubed
  • Lettuce
  • Other filling ingredients of your choice

Directions

  1. Prepare the rice and tater tots, if not already ready.
  2. Heat a skillet on med. heat.
  3. Add the oil and saute the onion and bell pepper.
  4. Once the veggies have softened, remove them from the skillet.
  5. Heat the beans in a pan or in the microwave.
  6. Cook the tortillas, one at a time, in the skillet, according to package directions.
  7. Assemble the burritos with all of the ingredients.
