Epic Burritos
entrees
Ingredients
1 package of un-cooked tortillas
1 package of cilantro-lime rice or Mexican rice, prepared - or make your own from scratch
1 can of green chile & lime refried beans, or regular if you can't find that flavor - or make your own from scratch
Sour cream
Shredded cheese
French-fried onions
Tater tots, cooked
Creamy Chipotle Sauce (Taco Bell brand)
Onion, sliced
Bell pepper, sliced
1 T. Vegetable oil
Guacamole or sliced avocado
Tomato, cubed
Lettuce
Other filling ingredients of your choice
Directions
Prepare the rice and tater tots, if not already ready.
Heat a skillet on med. heat.
Add the oil and saute the onion and bell pepper.
Once the veggies have softened, remove them from the skillet.
Heat the beans in a pan or in the microwave.
Cook the tortillas, one at a time, in the skillet, according to package directions.
Assemble the burritos with all of the ingredients.
