Ingredients

  • 4 c. chopped veggies: broccoli, cauliflower, and/or peas. Make sure they're thawed if frozen.
  • 2 c. cubed, cooked chikn (your favorite veggie chicken substitute) or the real thing if you'd prefer
  • 1 can cream of mushroom soup
  • 1/3 c. milk
  • 2 tsp. curry powder
  • 1 tsp. pepper
  • 1 T. lemon juice
  • 1/2 c. shredded Cheddar cheese
  • 1/4 c. panko bread crumbs
  • 2 T. butter
  • cooked rice, optional

Directions

  1. Preheat oven to 400 degrees F.
  2. Spray a 9-in pie plate or casserole dish with cooking spray.
  3. Place the chikn and veggies in the dish.
  4. Combine the soup, milk, curry powder, pepper, and lemon juice in a bowl and smear over the chikn and veggies.
  5. Top with the cheese.
  6. Melt the butter and mix with the panko. Sprinkle over the cheese.
  7. Bake for about 20 min. or until bubbly.
  8. Serve with rice, if desired.
