Homemade Mac-n-Cheese

Ingredients

  • 8 oz. uncooked pasta, any shape
  • 1/4 c. butter
  • 1/4 c. flour
  • 1/2 tsp. salt
  • Dash or more of pepper
  • 2 c. milk
  • 2 c. shredded cheese, cheddar or whatever type you'd like
  • Chopped veggies, optional, such as artichokes, broccoli, spinach, mushrooms, and/or peas
  • Chopped meat, optional, such as pulled pork, ham, and/or bacon
  • Barbecue sauce, optional

Topping Options

  • 1 c. panko bread crumbs
  • 1 c. crushed ritz crackers
  • 1/4 c. melted butter to combine with bread crumbs or crackers
  • 1 c. shredded cheese
  • Chopped green onions

Directions

  1. Cook pasta according to package directions. Drain and set aside.
  2. Meanwhile, in a sauté pan, melt butter over medium heat.
  3. Stir in flour.
  4. Add salt and pepper.
  5. Gradually add milk, stirring constantly.
  6. Cook and stir until thickened and bubbly.
  7. Add cheese a small amount at a time and stir until melted.
  8. Add pasta and stir until coated.
  9. If you'd like, you can make this into a baked dish: you can layer the mac-n-cheese with veggies and/or meats, in a greased 9x13 pan.
  10. Also, you can top with desired topping(s).
  11. Bake at 350 degrees F for 20 min. or until bubbly.
