Homemade Mac-n-Cheese

Ingredients
8 oz. uncooked pasta, any shape
1/4 c. butter
1/4 c. flour
1/2 tsp. salt
Dash or more of pepper
2 c. milk
2 c. shredded cheese, cheddar or whatever type you'd like
Chopped veggies, optional, such as artichokes, broccoli, spinach, mushrooms, and/or peas
Chopped meat, optional, such as pulled pork, ham, and/or bacon
Barbecue sauce, optional
Topping Options
1 c. panko bread crumbs
1 c. crushed ritz crackers
1/4 c. melted butter to combine with bread crumbs or crackers
1 c. shredded cheese
Chopped green onions
Directions
Cook pasta according to package directions. Drain and set aside.
Meanwhile, in a sauté pan, melt butter over medium heat.
Stir in flour.
Add salt and pepper.
Gradually add milk, stirring constantly.
Cook and stir until thickened and bubbly.
Add cheese a small amount at a time and stir until melted.
Add pasta and stir until coated.
If you'd like, you can make this into a baked dish: you can layer the mac-n-cheese with veggies and/or meats, in a greased 9x13 pan.
Also, you can top with desired topping(s).
Bake at 350 degrees F for 20 min. or until bubbly.
