Hummus Pasta

Ingredients

  • 12 oz. dry pasta
  • 1 c. hummus
  • 1 lb. mushrooms, sliced
  • 1 T. olive oil
  • 1 c. or more of the pasta cooking water
  • 1 tsp. salt or to taste
  • 1 tsp. minced garlic
  • pepper to taste
  • 1/4 c. chopped fresh parsley or basil

Directions

  1. Start cooking the pasta according to package directions.
  2. In a large skillet, heat the olive oil over medium heat.
  3. Add the mushrooms and cook until softened, about 5 min.
  4. Add the garlic and cook for another minute.
  5. Add the hummus, salt and pepper.
  6. When the pasta is done, reserve the cooking water.
  7. Add 1 c. of the pasta water to the skillet and stir.
  8. Add the drained pasta to the skillet with the hummus mixture.
  9. Add more water if desired to thin out the sauce.
  10. Add the parsley or basil and stir.
  11. Serve hot.
