Oatmeal Chocolate Chip and Raisin Muffins

Ingredients
2 c. raisins and/ or craisins
1 c. butter
2 c. sugar
4 eggs
3/4 tsp. salt
1 tsp. vanilla
4 c. flour (I often use a combination of whole wheat and white)
1/2 tsp. cinnamon
1/4 tsp. nutmeg
Other spices if desired, such as cardamom, cloves, and/or allspice
1 c. milk
1 T. baking soda
4 c. oats (quick or old-fashioned)
2 c. chocolate chips
1 c. nuts, optional
Directions
Preheat oven to 400 degrees F.
Cover raisins/craisins with very hot water and let sit.
Place cupcake liners in muffin tins or grease muffin tins.
In a large mixing bowl, cream butter and sugar together.
Add eggs, salt, and vanilla and mix well.
Add flour, spices, and milk and mix until combined.
Drain the raisins/craisins, reserving 1 c. of the water.
Add the baking soda to that 1 c. of the raisin water and stir. Add this to the batter.
Add the oats.
Stir in raisins/craisins, nuts (if using), and chocolate chips.
Fill muffin tins almost full.
Bake for about 20 min. or until light golden brown.
Cool on a wire rack.
