Oatmeal Chocolate Chip and Raisin Muffins

Ingredients

  • 2 c. raisins and/ or craisins
  • 1 c. butter
  • 2 c. sugar
  • 4 eggs
  • 3/4 tsp. salt
  • 1 tsp. vanilla
  • 4 c. flour (I often use a combination of whole wheat and white)
  • 1/2 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • Other spices if desired, such as cardamom, cloves, and/or allspice
  • 1 c. milk
  • 1 T. baking soda
  • 4 c. oats (quick or old-fashioned)
  • 2 c. chocolate chips
  • 1 c. nuts, optional

Directions

  1. Preheat oven to 400 degrees F.
  2. Cover raisins/craisins with very hot water and let sit.
  3. Place cupcake liners in muffin tins or grease muffin tins.
  4. In a large mixing bowl, cream butter and sugar together.
  5. Add eggs, salt, and vanilla and mix well.
  6. Add flour, spices, and milk and mix until combined.
  7. Drain the raisins/craisins, reserving 1 c. of the water.
  8. Add the baking soda to that 1 c. of the raisin water and stir. Add this to the batter.
  9. Add the oats.
  10. Stir in raisins/craisins, nuts (if using), and chocolate chips.
  11. Fill muffin tins almost full.
  12. Bake for about 20 min. or until light golden brown.
  13. Cool on a wire rack.
