Pumpkin Bread

Ingredients

  • 5 eggs
  • 1 15-oz. canned pumpkin
  • 1 1/4 c. vegetable oil
  • 2 c. sugar
  • 2 3-oz. boxes of vanilla pudding mix, or 3/4 c. vanilla pudding mix
  • 1 tsp. baking soda
  • 1/2 T. cinnamon
  • 1/4 tsp. cloves
  • 1/4 tsp. nutmeg
  • 1/4 tsp. cardamom
  • 1/2 tsp. salt
  • 2 c. flour

Directions

  1. Preheat the oven to 325 degrees F.
  2. Beat eggs. Then add pumpkin & oil and beat until smooth.
  3. Add and mix in remaining ingredients.
  4. Grease and flour loaf pans. You can use any size, but for reference, this recipe makes 2 regular-sized loaves.
  5. Pour batter into pans.
  6. Bake for 50-55 min.
