Smothered Hummus

Ingredients
1 c. hummus
8 oz. cherry tomatoes, halved
8 oz. cucumber, diced
1/2 c. red onion, diced
1/2 c. feta cheese, crumbled
1/4 c. Kalamata olives, pitted and halved
1/4 c. green and/or black olives, pitted and halved
1/2 c. bell pepper, diced
1 1/2 T. olive oil
2 T. lemon juice
1 tsp. dried oregano
1/4 c. fresh parsley, chopped
1/2 c. feta cheese, crumbled
Salt and pepper to taste
Pita chips or fresh veggies for serving
Directions
Spread the hummus on a large plate or platter.
In a large bowl, combine the tomatoes, cucumber, red onion, feta cheese, olives, olive oil, lemon juice, oregano, parsley, salt and pepper.
Mix well.
Spoon the mixture over the hummus.
Serve with pita chips or fresh veggies.
