Soothing Chai

Ingredients
2 c. strong peppermint tea
4 c. milk (soy, dairy, etc. A vanilla type is especially nice.)
2 cinnamon sticks
1 tsp. ginger powder
3/4 tsp. cardamom,
1/2 tsp. whole peppercorns
1/4 tsp. ground cloves
1/3 c., or to taste, sweetener of choice (honey, sugar, rice syrup, etc.)
Strong Peppermint Tea
2-3 T. loose peppermint leaf
2 c. boiling water
Directions
Steep peppermint leaves in boiling water for 20 min.
Strain.
Pour tea into a large stockpot and add milk and spices.
Heat on medium. Once steam begins to rise, lower heat to medium-low.
Simmer for 30 min., stirring regularly.
Use a mesh strainer or cheesecloth to strain into a larger serving container.
Stir in sweetener.
Serve hot or cold.
