Soothing Chai

Ingredients

  • 2 c. strong peppermint tea
  • 4 c. milk (soy, dairy, etc. A vanilla type is especially nice.)
  • 2 cinnamon sticks
  • 1 tsp. ginger powder
  • 3/4 tsp. cardamom,
  • 1/2 tsp. whole peppercorns
  • 1/4 tsp. ground cloves
  • 1/3 c., or to taste, sweetener of choice (honey, sugar, rice syrup, etc.)

Strong Peppermint Tea

  • 2-3 T. loose peppermint leaf
  • 2 c. boiling water

Directions

  1. Steep peppermint leaves in boiling water for 20 min.
  2. Strain.
  3. Pour tea into a large stockpot and add milk and spices.
  4. Heat on medium. Once steam begins to rise, lower heat to medium-low.
  5. Simmer for 30 min., stirring regularly.
  6. Use a mesh strainer or cheesecloth to strain into a larger serving container.
  7. Stir in sweetener.
  8. Serve hot or cold.
