Tortellini Soup

Ingredients

  • 2 T. olive oil
  • 2 cloves of garlic (or 1 tsp. minced garlic)
  • 2 cans of condensed tomato soup
  • 1/4 c. sun-dried tomatoes, chopped, and/or 1/2 c. fresh tomato, chopped
  • 2 c. half-and-half or milk
  • 2 c. broth
  • 1 tsp. onion powder
  • 1 T. Italian seasoning
  • 1/2 tsp. pepper
  • 1/2 tsp. salt (or to taste)
  • 1 package tortellini (frozen, fresh, or dry)
  • 1/2 c. Parmesan cheese, for garnish

Directions

  1. In a large stock pot over medium heat, saute garlic in olive oil until golden brown. Make sure it doesn't get burnt!
  2. Add soup, tomatoes, half-and-half or milk, broth and spices.
  3. Bring to a simmer.
  4. Drop tortellini into the soup and cook them according to package directions.
  5. Serve topped with Parmesan cheese.
