Vegan Crêpes

Ingredients

  • 1 1/2 c. whole-wheat or white flour
  • 3 T. brown sugar
  • 1 tsp. baking powder
  • 1 1/2 c. - 2 c. plant milk
  • 1 T. oil
  • 1 tsp. vanilla

Directions

  1. Mix all ingredients, using 1 1/2 c. plant milk at first; add more milk if needed.
  2. Heat skillet over med-high heat.
  3. Lightly coat with oil if needed.
  4. Swirl around 3 T. batter.
  5. Cook 1-2 min.
  6. Flip & cook 1 min. more.
  7. Continue until batter is gone.
  8. Fill and/or top crêpes as desired.
