Vegan Pancakes

Ingredients

  • 1 1/4 c. whole-wheat flour
  • 1 1/4 c. white flour
  • 1/4 c. sugar
  • 4 tsp. baking powder
  • 1 tsp. salt
  • 2 tsp. ground flax
  • 2 1/2 c. plant milk or water
  • 2 T. oil
  • 1 tsp. vanilla

Directions

  1. Mix dry ingredients in a large bowl.
  2. Pour wet ingredients in the center and stir until blended.
  3. Drop batter by spoonfuls onto med-high-heater, lightly-oiled pan.
  4. Cook until edges look dry.
  5. Flip & cook about 2 min. more.
