Vegan Taco 'Meat'

Ingredients
1 head cauliflower
8 oz. mushrooms
1 c. walnuts
2 T. soy sauce
2 T. chili powder
2 tsp. cumin
1 tsp. smoked paprika
1/2 tsp. garlic powder
1/2 tsp. onion powder
1/4 tsp. cayenne powder
1/4 tsp. pepper
1/4 tsp. salt
Directions
Preheat oven to 350 degrees F.
Remove the core and leaves of the cauliflower.
Cut the cauliflower into pieces.
Pulse the cauliflower in a food processor until it has a rice-like consistency.
Pulse the mushrooms until they are in pieces similar to the cauliflower.
Pulse the walnuts until they are in pieces similar to the cauliflower and mushrooms.
Mix the cauliflower, mushrooms, and walnuts together in a large bowl.
Add the rest of the ingredients and mix well.
Spread the mixture on a lightly-sprayed or parchment-lined baking sheet.
Bake for 30 min.
Stir lightly and bake for 10-15 more mins.
